Icebox Tiramisu

Icebox Tiramisu is a layered dessert assembled in glasses or bowls, featuring coffee-and-Kahlúa-soaked chocolate wafer cookies alternated with a whipped cream mixture sweetened with confectioners sugar and vanilla. The layers are chilled to set, creating a creamy and coffee-flavored treat without baking.

Description

The recipe starts by whipping chilled heavy cream until thick, then adding confectioners sugar and vanilla, continuing to whip to firm peaks. A coffee and Kahlúa mixture is prepared to soak chocolate wafer cookies briefly. In individual serving glasses, cookies are layered with espresso mixture, grated semi-sweet chocolate, and whipped cream, repeating to build five layers, ending with cream and chocolate topping.

The chilled dessert offers contrasting textures: the crisp yet softened chocolate wafers from soaking, creamy rich whipped topping, and a coffee and liqueur flavor accent. Grated chocolate adds a slight texture contrast and chocolate notes. The cold temperature enhances the refreshing quality.

This tiramisu does not require baking and can be made ahead, chilled for at least two hours to allow flavors to meld and textures to firm. It is suitable for individual servings and casual entertaining.

Ingredients

Servings
  • 2/3 cup heavy whipping cream chilled
  • 3 tsp confectioners sugar
  • 1 tsp vanilla extract
  • 1/3 cup coffee cold, strong; or espresso
  • 1/3 cup Kahlúa
  • 20 chocolate wafer cookies
  • 2 oz semi-sweet chocolate for grating

Instructions

  1. Whip the cream until it starts to thicken. Add the sugar and vanilla extract and continue whipping until it's firm and holds it's shape.
  2. Mix together the espresso and kahlua and set aside.
  3. Take four glasses or small dessert bowls and layer one cookie at the bottom of each. Spoon 2 tsp of the espresso mixture on top, spreading it around so the entire cookie gets soaked.
  4. Grate a layer of chocolate over the top of the cookie, using a microplane or small grater.
  5. Put a dessert spoon full of cream on top of the cookie and chocolate. Take another cookie and lay it on top of the cream, pressing down slightly to spread the cream out. Continue layering until you have 5 layers, ending with whipped cream and a final sprinkling of chocolate.
  6. Cover loosely and put in the refrigerator for at least 2 hours, to get really cold.
  7. Note: If you are making these in mason jars, don't put on the last topping of whipped cream, just screw on the caps and refrigerate until ready to serve, then top with the last layer of whipped cream and shaved chocolate.
