Indian Cauliflower Rice

Indian Cauliflower Rice is a spiced vegetable dish featuring cauliflower rice sautéed with cumin, turmeric, cayenne, and garlic powder, combined with sautéed onions, shredded carrots, peas, and optionally cooked chicken. Description

Indian Cauliflower Rice consists of finely grated cauliflower cooked with warm spices such as cumin, turmeric, and cayenne pepper, along with garlic powder and salt. The initial cooking briefly softens the cauliflower and allows the spices to infuse the vegetable. Separately, onions and shredded carrots are sautéed until tender and lightly caramelized.

After combining the cooked cauliflower with the sautéed vegetables and peas, the dish is gently tossed. Cooked chicken breast can be added for additional protein. Final seasoning adjustments can be made to balance salt and spice levels, and garnishes like peanuts and cilantro add texture and freshness.

Ingredients

  • 2 cups cauliflower rice
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon Turmeric
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • 1 cup carrot shredded
  • 1 onion sliced
  • 1 cup pea
  • 1 oz can chickpeas
  • 1 chicken breast cooked, sliced or shredded, optional

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium-high heat.  Add cauliflower rice and all seasonings.  Cook for about 4-5 minutes stirring often, until tender.
  2. Remove cauliflower from pan and add another tablespoon oil.  Cook onions and carrots for about 4 minutes, stirring often. 
  3. Return cauliflower to pan and add peas.  Add cooked chicken if using.  Toss gently and taste.  Add more salt and spice if necessary.  I added more cumin and salt at the end.
  4. Serve with peanuts and cilantro.
