Indian Green Chutney
Description
Indian Green Chutney combines fresh cilantro and mint leaves with aromatic ingredients including ginger, garlic, green chilies, cumin seeds, and peppercorns. The fresh herbs are used with their stems to maximize the flavor. Blending these with olive oil provides an emulsified, creamy consistency while lemon juice introduces brightness and acidity. Salt enhances the overall taste.
The texture is smooth and the flavor profile features a combination of herbal freshness, mild heat from green chilies, aromatic warmth from cumin and pepper, and a subtle pungency from ginger and garlic. The olive oil also helps preserve the chutney’s vibrant green color initially, although some darkening occurs over time due to oxidation.
This chutney complements Indian snacks, wraps, chaat, and roasted meats, adding a fresh and zesty note. Serving it at room temperature about 20 minutes after preparation allows the flavors to meld fully. To maintain its bright color, a thin layer of oil can be poured on top when storing.
Stored in the refrigerator, the chutney remains fresh for 3-4 days and can be frozen for up to a month, though fresh chutney offers the best flavor.

Notes
- Choose fresh herbs with vibrant green leaves and minimal yellowing to ensure optimal flavor.
- Including stems in the chutney boosts flavor intensity without affecting texture negatively.
- Olive oil aids in creating a creamy texture and helps preserve freshness and color.
- Adjust the green chili, lemon juice, and salt quantities to suit your personal taste preferences.
- To prevent the chutney from darkening, pour a thin layer of olive oil on top before refrigeration.
- Allow the chutney to sit at room temperature for about 20 minutes before serving to let flavors develop.
- Store in a sealed container in the fridge for up to 4 days or freeze for up to a month, noting that fresh chutney tastes better.
