This whole roast chicken is marinated with a spice mix of garam masala, cardamom, turmeric, coriander, chili powder, and other seasonings blended with oil and lemon juice. Roasting at high heat then lowered temperature yields a deeply spiced, aromatic chicken with tender meat and flavorful skin. Description

Indian-spiced roast chicken uses a robust spice blend including garam masala, turmeric, paprika, coriander, cardamom, chili powder, salt, pepper, and a hint of sugar. These spices are combined with vegetable oil and fresh lemon juice to create a marinade that coats the chicken thoroughly. The skin is lifted to brush the marinade underneath, ensuring seasoning penetrates the meat and skin.

The chicken is roasted initially at 400°F for 20 minutes to start browning and crisping the skin, then the heat is reduced to 350°F for 30 to 40 minutes to finish cooking the chicken through gently. Onions and whole garlic cloves roast alongside, adding sweet aromatics to the pan. The resting period after roasting lets the juices redistribute for moist, flavorful meat.

  • ½ cup vegetable oil (alternatively use ½ cup plain yogurt)
  • 3 tbsp garam masala
  • ½ tsp paprika
  • ½ tsp ground cardamom
  • ½ tsp Turmeric
  • ½ tsp ground coriander
  • ½ tsp chilli powder
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp sugar
  • 3 tbsp lemon juice
  • 3 garlic crushed, cloves
  • 1 tsp ginger crushed
  • 2 kg (4lb) chicken whole
  • 1 onion quartered
  • 4 garlic cloves

Instructions

  1. Preheat the oven to 200°C/400°F.
  2. Combine all the spices, oil and lemon juice and mix well.
  3. Loosen the skin over the chicken breast then brush the marinade over the chicken, under the skin and into the cavity.
  4. Place the chicken into a roasting dish then add the onions and garlic.
  5. Place into the oven and allow to roast for 20 minutes at 200°C/400°F then turn the heat down to 180°C/350°F and allow to roast for another 30-40 minutes until the chicken is cooked through.
  6. Remove the roast chicken from the oven and allow to rest for 10 minutes before carving and serving.
