Instant Pot Dulce De Leche

Instant Pot Dulce De Leche transforms sweetened condensed milk into a silky caramel sauce using pressure cooking with a baking soda mixture to prevent curdling. Cooked in a bowl within the pot’s water reservoir, it gradually develops a rich golden color and creamy texture. The flexibility in cooking time accommodates variations in brands and desired caramel depth, producing a homemade dulce de leche suitable for desserts or spreads.

Description

This recipe starts by dissolving baking soda in warm water, added to sweetened condensed milk placed in a stainless steel bowl. The bowl sits inside the Instant Pot filled with cold water, allowing gentle indirect heat during pressure cooking. The high pressure and steam environment promote caramelization of sugars in the condensed milk while the baking soda buffers acidity, preventing lumps. After cooking from 40 to 90 minutes depending on the desired color and brands used, the mixture is naturally released from pressure and stirred. If the color is insufficient or texture lumpy, further cooking or blending can improve consistency. This method allows for controlled caramelization without burning or scorching, unlike stovetop approaches. The final dulce de leche is thick, sweet, and smooth, ideal for topping or filling sweets.

Ingredients

Servings
  • 1 oz can (396g) sweetened condensed milk
  • 1 cup (250ml) water cold

Baking Soda Mixture:

  • ½ teaspoon (3g) baking soda
  • 3 tablespoons (45ml) water warm

Instructions

  1. Create Baking Soda Mixture: In a small mixing bowl, combine ½ tsp (3g) baking soda with 3 tbsp (45ml) warm water. Mix very well until all the baking soda has dissolved.
  2. Combine Ingredients: Pour 1 14oz can (414ml) sweetened condensed milk in a stainless steel bowl (we used a 7” bowl for our 6 quart Instant Pot). Add in the baking soda mixture and combine. Mix well.
  3. Pressure Cook Dulce De Leche: Add 1 cup (250ml) cold water in the Instant Pot. Place the stainless bowl of condensed milk mixture directly in the water. Close lid and pressure cook at High Pressure for 40 - 90 minutes (Please see notes), then Full Natural Release.
  4. Create Instant Pot Dulce de Leche: Open the lid carefully. Remove the stainless steel bowl from the pressure cooker. Mix & inspect the dulce de leche with a fork. If it is not caramelized to desired color, simply place it back into the Instant Pot and pressure cook it for another 20 - 30 minutes. The mixture will be lumpy, use an immersion blender or blender to smooth out the lumps.
  5. Serve: The dulce de leche will thicken up as it cools and thin out as it warms up.

Notes

  • Cooking times vary by brand of sweetened condensed milk; start with 40 minutes and adjust up to 90 minutes to reach the preferred caramel color.
  • Use an immersion blender to smooth out lumps if the dulce de leche texture is uneven after cooking.
