Instant Pot Leftover Turkey Soup. You will love this creamy instant pot turkey soup made from leftover turkey stock, leftover turkey gravy and vegetables.

Ingredients

- Instant Pot
- Hand blender
Instant Pot Leftover Turkey Soup Ingredients:
- 1 small red onion
- 1 Tbsp extra virgin olive oil
- 3 medium carrots
- 1 medium butternut squash
- 3 medium potatoes
- 300 ml leftover turkey gravy
- 300 ml Leftover Turkey Stock
- 200 ml white wine
- 1 Tbsp basil
- 1 Tbsp mixed herbs
- salt & pepper
- 1 Cup frozen corn optional
- 1 Cup frozen peas optional
Instructions
- Peel and dice your vegetables.
- Peel and dice your red onion. Sauté in the instant pot with some extra virgin olive oil on the sauté setting. When the onion softens press cancel.
- Load everything into the instant pot inner pot, stir and place the lid on. Set the valve to sealing and cook for 4 minutes with a quick pressure release.
- Use a hand blender to make smooth or alternatively you can keep as a chunky soup.
- Load into bowls and serve with bread rolls.
Notes
- Swaps. You can follow the same method with leftover lamb, leftover ham, leftover chicken, leftover beef etc.
- Stretch. If you need the soup to feed more people you can add frozen corn and frozen peas and stir it in and it will then stretch further.
