Instant Pot Rice Pudding
Description
This rice pudding recipe uses an Instant Pot to simplify cooking and reduce active stirring. Sugar, risotto rice, and whole milk are combined and brought to a boil on the sauté function to avoid sticking, then cooked under low pressure for 12 minutes. After natural pressure release, butter and vanilla extract are stirred in to enrich the pudding's texture and flavor. The resulting pudding is creamy with the tender bite of risotto rice, naturally thickened by the starches.
Serving the pudding with strawberry jam adds a fruity contrast, while an optional addition of cream can deepen the richness. This preparation offers a warm, comforting dessert with traditional creamy texture and mild, sweet flavor.
When the pudding is thicker than desired, additional milk can be stirred in to loosen the consistency, noting it thickens upon cooling. Using risotto rice lends the ideal starch content for this style of pudding, as long grain rice is discouraged. Adding butter contributes to a classic creamy mouthfeel.

- 500 g risotto rice
- 2400 ml milk whole
- 300 g sugar
- 50 g butter
- 2 Tsp vanilla extract
- strawberry jam optional
Instructions
- Place the sugar, rice, and milk into the Instant Pot. Place it on the sauté function and bring to the boil while stirring constantly. Don’t even leave it for a couple of seconds as it will stick to the bottom of your pot.
- Place the lid on your Instant Pot and set it to sealing. Place it on the rice function for 12 minutes and it will be preset to the low pressure. After it has beeped, leave it for 15-20 minutes until all pressure has been release.
- Remove the lid and stir it for a few minutes adding the butter and the vanilla as you stir.
- Serve it with strawberry jam. Or for the naughty chef add some cream too!
Notes
- Always add butter at the end to achieve a creamy and rich flavor.
- If the pudding is too thick, stir in extra milk; it will firm up further as it cools.
- Risotto rice works best for traditional rice pudding texture; avoid long grain rice.
