Instant Pot Rice Pudding

Instant Pot Rice Pudding combines rinsed white rice with milk, ghee, sugar, and fragrant cardamom cooked under pressure for a creamy and comforting dessert. Optional additions like nuts, saffron, raisins, and shredded coconut introduce texture and subtle flavor notes. The pudding is finished by mashing the rice and adjusting milk for preferred consistency, serving either warm or chilled according to taste.

Description

The Instant Pot Rice Pudding recipe sets basmati or short grain rice cooking alongside ghee, milk, sugar, and cardamom powder in a pressure cooker. This method gently infuses the spices and softens the rice to a tender, creamy texture typical of traditional rice pudding. Optional saffron adds a floral aroma and a pale golden hue, while chopped nuts and raisins contribute crunch and sweetness. After pressure cooking with natural release, the rice is stirred and additional milk is mixed in to smooth out the texture.

The pudding carries mild sweetness balanced by aromatic cardamom and the rich fat of ghee. The texture is creamy with tender grains softened through slow melding under pressure and final mashing, delivering a consistency that can be adjusted with added milk. Serving at either warm or chilled temperatures allows flexibility based on preference or season.

This rice pudding suits serving as a comforting dessert or a mildly sweet breakfast. It pairs well with fresh fruit or a sprinkle of additional nuts for contrast. Preparation in the Instant Pot reduces direct stirring and monitoring, streamlining traditional stovetop methods.

Notes within the recipe caution about rinsing rice and drying raisins to prevent impurities and milk curdling, emphasizing use of low-fat milk and natural pressure release to avoid scorching or splattering. Substitutions for vegan versions and sweetness adjustments after cooking provide versatility. The pudding thickens upon cooling, so reheating with added milk adjusts texture if made ahead.

  2. Add 3 cups low-fat milk, water, sugar, cardamom powder, nuts, saffron, raisins, coconut, and salt.
  3. Close Instant Pot lid with the pressure valve to sealing. Press the Porridge button. Allow Natural Pressure Release.

  5. Cook on saute for 2-3 minutes or keep on the warm mode until ready to be served. Serve Warm or Chilled

Notes

  • Rinse and drain the rice well to remove excess starch before cooking to prevent curdling.
  • If using raisins, rinse and pat dry before adding to keep the pudding clean and prevent milk curdling.
  • Use low-fat milk instead of whole milk to avoid protein separation during pressure cooking.
  • Allow the Instant Pot to naturally release pressure to prevent splattering of hot milk.
  • Keep a designated sealing ring for desserts to maintain flavor purity and cleanliness.
  • Add more milk after cooking to adjust pudding thickness or before reheating if stored.
  • For a richer pudding, add cream or full-fat milk after pressure cooking, not before.
  • Vegan substitutions include swapping ghee with vegan butter and milk with almond milk.
  • Nuts can be omitted or altered according to allergy needs; they also provide garnish and texture.
  • When short on time, omit sautéing rice and directly pressure cook all ingredients.
  • Adjust sweetness by adding sugar after cooking to taste.
