Instant Pot Steamed Jam Pudding

Old fashioned steamed pudding doesn’t get any better than instant pot steamed jam pudding. Just like yummy school dinners this steamed pudding is so easy to cook in your instant pot pressure cooker.

Ingredients

  • 55 g caster sugar
  • 55 g butter
  • 1 egg large
  • 112 g self-raising flour
  • 2 Tbsp milk whole
  • 3 Tbsp strawberry jam

Instructions

  1. In a bowl, beat the sugar with the butter until you have a light and fluffy mixture. Add in a large egg and blend slowly until smooth.
  2. Add in flour with a fork and lightly mix until well combined. Then add a little milk at a time to create a creamy sponge batter.
  3. Grease a steamed pudding basin and then add a layer of strawberry jam.
  4. Cover the jam with the sponge mixture.
  5. Then wrap the top tightly with foil.
  6. In the instant pot add your trivet and then add your pudding basin with foil. Pour enough boiling water to cover up to ¼ of the bottom of the basin.
  7. Place the lid on the instant pot, set the valve to sealing and cook for 25 minutes on pressure cook. Do a quick pressure release and then let it cool before removing from the basin and serving with custard.

Notes

  • Resting. Once you have released pressure remove the foil and then load the bowl upside down into the container you plan to serve it in. No need to pat the top as it will naturally come out on its own in a perfect shape.
  • Quantities. One recipe makes enough to half fill one pudding basin. Though this is still a big enough quantity to divide into four and feed four people. Double it and you can do two batches that would feed 8.
  • Mix. You can also mix up your favourite jam. We used a summer fruits jam from Goathland, but you can use whichever you want.
