Curried lamb and tomatoes with baked eggs for a supremely delicious and quick supper.

Ingredients
- 2 tbsp olive oil
- 1 lb lamb or beef will work too. Lamb does taste a bit more flavourful however, ground
- 1 yellow onion minced, medium
- 1/3 cup parsley finely chopped
- 1 tsp yellow curry powder
- 2 tomato cored and roughly chopped (or 1 x 14 oz can of diced tomatoes, small, vine-ripe
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 4 egg
- red chile flakes for garnish, crushed
- Naan for serving (optional, or flatbread
