  • 2 tbsp olive oil
  • 1 lb lamb or beef will work too. Lamb does taste a bit more flavourful however, ground
  • 1 yellow onion minced, medium
  • 1/3 cup parsley finely chopped
  • 1 tsp yellow curry powder
  • 2 tomato cored and roughly chopped (or 1 x 14 oz can of diced tomatoes, small, vine-ripe
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • 4 egg
  • red chile flakes for garnish, crushed
  • Naan for serving (optional, or flatbread
