Irish Apple Crumb Cake

This beautifully moist and flavor packed apple cake is an easy one bowl cake topped with a crumble mixture. It's subtly spiced and sweet and the apples really shine in it! Have had nothing but rave reviews for this recipe.

Ingredients
For the cake:
- 1/2 cup butter unsalted, softened
- 3/4 cup light brown sugar 150g
- 2 egg room temperature
- 1 teaspoon vanilla extract
- 1.5 cups all-purpose flour 200 g, sifted
- 1 teaspoon baking powder
- pinch salt
- 1 teaspoon cinnamon powder
- 2 apple about 300 g, or heaped 2 cups, medium, peeled, cored, chopped into 1/2 inch pieces
For the crumble:
- 1/4 cup white sugar 50 g
- 1/4 cup flour 32 g
- 1/4 cup butter 56g
Instructions
For the cake:
- Heat oven to 180C. Grease and line an 8 or 9 inch pan with parchment paper.
- Cream the butter and brown sugar in large bowl, 2-3 minutes on medium speed until light and fluffy.
- Add the eggs one at a time until mixed, then vanilla.
- Add the flour, baking powder, salt and cinnamon and fold until just combined, then fold in the apple cubes. Batter will be thick! Spread into prepared pan.
- Combine all the crumble ingredients in a small bowl, pinching together with fingertips until small crumbs form, then scatter evenly onto cake surface.
- Bake for 40-45 minutes until toothpick comes out clean.
Notes
- This recipe is adapted from The Clever Carrot, who adapted it from Donal Skehan.
- The cake is delicious plain, and phenomenal served warm with vanilla ice cream and caramel sauce.
- I like using one red apple and one green apple just to mix things up, but either or will work great.
