Ingredients

Servings
  • 200 g plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbsp yogurt
  • 150 ml water lukewarm
  • 1 tsp Food Coloring yellow or orange or red

Sugar Syrup

  • 300 ml water
  • 300 g sugar
  • 1 tsp lemon

Instructions

  1. In a mixing bowl, combine the plain flour, baking powder, and baking soda.
  2. Add the yogurt and lukewarm water gradually to form a smooth batter. Mix well.
  3. Stir in the food colouring of your choice. The batter should have a bright, vibrant colour.
  4. Cover the bowl with a clean kitchen towel and let it rest for 1 hour to ferment.
  5. In the meantime, prepare the syrup. In a saucepan, combine the water, sugar, and lemon juice. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes until slightly thickened. Remove from heat and set aside.
  6. After the batter has fermented, heat the oil in a deep frying pan over medium heat.
  7. Transfer the batter to a squeeze bottle or a piping bag with a small round nozzle.
  8. Squeeze the batter into the hot oil in a circular motion to form spiral shapes. Fry until golden brown and crisp.
  9. Remove the fried jalebis from the oil using a slotted spoon and immediately dip them into the warm syrup. Ensure they are coated evenly.
  10. Allow the jalebis to soak in the syrup for a few seconds, then remove and place on a plate lined with kitchen paper to absorb any excess syrup.
  11. Serve warm and enjoy your delicious homemade jalebis!

Notes

  • Adding food colouring to the flour mixture gives the jalebis their vibrant appearance. Be sure to choose a food colouring that complements your preference.
