Ingredients

Ingredients:

  • 300 g flour
  • 50 g almond flour
  • 50 g powdered sugar
  • 1/3 tsp salt
  • 200 g butter
  • 2 egg yolk
  • clementine juice or orange juice, from two fruits

Filling:

  • plum jam
  • raspberry jam
  • blueberry jam
  • 2 egg white
  • 100 g sugar

Instructions

How to make JAM COOKIES WITH MERINGUE:

  1. Whisk the egg whites with a pinch of salt.
  2. When you have a firm foam, start adding the sugar gradually, one tablespoon at a time.
  3. Mix until the sugar is completely incorporated into the egg whites.
  4. Put the meringue in a piping bag.
  5. Line a large baking tray with baking paper.
  6. Preheat the oven to 100 degrees Celsius (210 Fahrenheit).
  7. Pipe the meringue into rounds.
  8. Put the meringue in the oven and bake for 30-40 minutes, until crispy on the outside.
  9. Turn off the heat and leave the meringue in the oven to cool.

Cookies:

  1. Mix the soft, room temperature butter with the powdered sugar until creamy, about 10 minutes.
  2. Add the egg yolks and clementine juice and continue mixing until smooth. Turn off the mixer.
  3. Mix the flour with the almond flour, salt, and vanilla pod seeds.
  4. Put the dry ingredients on top of the buttercream and incorporate with a spoon.
  5. If the dough is too soft, add another tablespoon or two of flour.
  6. Wrap the dough in cling film and refrigerate for 2-3 hours.
  7. Divide the dough into 2 pieces.
  8. Roll out one piece into a 0.3cm (0.12 inch) thin sheet.
  9. The other piece of dough is chilled again.
  10. Cut out cookie shapes of different sizes.
  11. Place the cookies on a baking tray lined with baking paper.
  12. Bake for 12-13 minutes, until lightly browned around the edges. Do the same with the rest of the dough.
  13. Leave the cookies to cool on a cooling rack.

Assemble:

  1. Put a layer of jam on the bottom of each cookie.
  2. Carefully place a meringue on top.
  3. Press gently to make it stick.
  4. Place small star or flower-shaped cookies on top, and serve!
