Description
The cake batter forms by whisking egg and heavy cream, then blending in cocoa powder and sweetener until smooth. Placing a square of dark or sugar-free chocolate on top before microwaving allows it to melt into a molten center while the outside cooks into a soft cake. The microwave timing adapts to wattage but generally takes around 70 seconds at 900W.

Ingredients
- 1 egg large
- 2 tablespoon heavy cream double cream
- 2 tablespoon cocoa powder
- 2 tablespoon powdered sweetener
- 1 quare chocolate or 90% chocolate or 1 tablespoon sugar free chocolate chips, sugar free
Instructions
- In a mug or ramekin, blend together the egg and the cream with a fork.
- Add one tablespoon of cocoa powder and whisk until incorporated. Then add the second tablespoon of cocoa powder and blend until smooth.
- Now, stir in the powdered sweetener until no lumps remain.
- Place the square of dark chocolate on top of the batter. Alternatively, use sugar free chocolate chips.
- Microwave for about 1 minute until the mug cake starts to fold away from the edges and the chocolate square has melted. Mine took 70 seconds (900W). Eat while warm.
