Keto Lava Mug Cake

This Keto Lava Mug Cake is a single-serving low-carb dessert made quickly in the microwave. The batter combines egg, heavy cream, cocoa powder, and powdered sweetener, topped with a square of dark or sugar-free chocolate to create a molten chocolate center. The result is a moist and rich chocolate cake with a gooey core, enjoyable warm straight from the mug.

Description

The cake batter forms by whisking egg and heavy cream, then blending in cocoa powder and sweetener until smooth. Placing a square of dark or sugar-free chocolate on top before microwaving allows it to melt into a molten center while the outside cooks into a soft cake. The microwave timing adapts to wattage but generally takes around 70 seconds at 900W.

This microwave technique provides a quick way to enjoy a chocolate lava cake without heating an oven. The texture contrasts a tender cake with a liquid chocolate middle. Eating it warm preserves this contrast.

The notes mention the option to increase chocolate pieces for a larger molten center, which raises carb slightly. An oven method at 180°C is also suggested for a more traditionally baked lava cake with a soft center.

Ingredients

Servings
  • 1 egg large
  • 2 tablespoon heavy cream double cream
  • 2 tablespoon cocoa powder
  • 2 tablespoon powdered sweetener
  • 1 quare chocolate or 90% chocolate or 1 tablespoon sugar free chocolate chips, sugar free

Instructions

  1. In a mug or ramekin, blend together the egg and the cream with a fork.
  2. Add one tablespoon of cocoa powder and whisk until incorporated. Then add the second tablespoon of cocoa powder and blend until smooth.
  3. Now, stir in the powdered sweetener until no lumps remain.
  4. Place the square of dark chocolate on top of the batter. Alternatively, use sugar free chocolate chips.
  5. Microwave for about 1 minute until the mug cake starts to fold away from the edges and the chocolate square has melted. Mine took 70 seconds (900W). Eat while warm.

Notes

  • Microwave times vary by power; 900W takes about 70 seconds.
  • Adding more chocolate squares increases molten center size and net carbs slightly.
  • This recipe makes one serving containing about 4g net carbs.
  • For oven baking, use 180°C for 9-11 minutes to achieve a molten center.
