Description
This recipe combines unsweetened desiccated coconut with coconut cream and sugar-free syrup to bind the mixture without baking. Coconut oil adds richness and fat content aligned with keto dietary preferences. Blending the ingredients finely ensures the coconut shreds are smaller and the texture is cohesive.
After pressing the mixture firmly into a lined pan, chilling it solidifies the bars before cutting. A drizzle of dark chocolate with high cocoa content or sugar-free chocolate adds bitterness and contrast to the sweet coconut base. Another chill firms the chocolate, completing the bars. These no-bake treats provide a chewy, lightly sweet snack with low net carbs.
Variations include using different sugar-free syrups or powdered sweeteners combined with adjusted coconut cream amounts. This flexibility allows customization based on available sweeteners or preferences.
Ingredients
- 3 cups / 270g desiccated coconut unsweetened
- ⅓ cup / 80 ml coconut cream
- ½ cup / 120 ml syrup sugar free
- 4 tablespoon coconut oil
- 1 oz / 30g dark chocolate minimum 85% cocoa solids, or sugar free chocolate
Instructions
- Blend all ingredients in a high speed blender or with an electric mixer until and you have a moist, sticky mix. The coconut shreds should be MUCH smaller than they were before blending.
- Line a 8x5 inch pan with parchment paper and fill in the coconut mix. Press down with your hands until it's nice and firm. Smooth the top with a spatula.
- Place in the fridge for 15 minutes. Then remove and cut into pieces.
- Heat the chocolate in the microwave (30 second bursts) or in a water bath (place the bowl with chocolate into a larger bowl half-filled with boiled water. The heat gently melts the chocolate).
- Fill melted chocolate into a plastic bag and pierce a hole with a needle. Drizzle the coconut bars with the chocolate.
- Return to the fridge for 10 minutes so the chocolate firms up.
Notes
- Each bar contains approximately 5g net carbs using chocolate with at least 85% cocoa solids.
- Both Sukrin Fibre Syrup and Lakanto Maple Syrup have been tested and work well as sweeteners.
- For powdered sweeteners instead of syrup, use ½ cup sweetener and increase coconut cream by ½ cup.
- Compatible sweeteners include allulose, monk fruit blends, stevia blends, or Bocha Sweet.
