Keto Pumpkin Bars

For the Bars

  • 2 cups Super Fine Almond Flour
  • 1 cup pumpkin puree
  • ½ cup sour cream
  • ½ cup monk fruit/allulose
  • cup brown monk fruit/allulose
  • 3 whole eggs
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt

For the Frosting

  • 8 ounces cream cheese softened
  • ½ cup butter room temperature
  • cup monk fruit/allulose powdered
  • 1-2 tablespoons heavy cream or as needed
  • 1 teaspoon vanilla extract

Instructions

To Make the Pumpkin Bars

  1. Preheat oven to 350°F.
  2. In a mixing bowl, add in the almond flour, pumpkin pie spice, baking powder and salt. Whisk to combine and set aside.
  3. In another mixing bowl, add in the pumpkin puree, sour cream, eggs, vanilla extract and sweeteners. Using a hand mixer, whip for 2 minutes.
  4. Add in the dry ingredients and continue mixing, just until combined.
  5. Pour into a 9 x 13 pan or baking dish lined with parchment paper.
  6. Bake for 25-30 minutes or until a toothpick, when inserted, comes out clean. Allow to cool completely before frosting.

To Make the Cream Cheese Frosting

  1. Add the butter and cream cheese to a mixing bowl and mix together until combined.
  2. Add in the sweetener, vanilla and heavy cream.
  3. Continue mixing until well combined and fluffy.
  4. Once the pumpkin bars have completely cooled, spread the frosting over the top using an offset spatula.
  5. Chill in the fridge until the frosting has firmed up some, then cut into bars and serve.
  6. Store leftovers in an airtight container for several days or freeze.
