Keto Strawberry Buttercream Frosting

A silky-smooth, velvety keto strawberry frosting that is just perfect for piping onto low carb cupcakes or cakes! This 5 ingredient sugar free frosting is extra fruity and really simple to make.

  • 2 ticks / 230g butter unsalted, room temperature
  • cup / 160g cream cheese full fat, room temperature (I used Philadelphia)
  • 1 cup / 180g strawberries sliced (6.35 oz)
  • ¾ cup / 120g powdered sweetener or to taste, up to 2 cups
  • ½ teaspoon xanthan gum

Instructions

  1. Puree the strawberries in a food processor. Then, bring the strawberry puree to a boil in a saucepan. Reduce the heat and simmer for 15 minutes or until reduced by half. Start stirring regularly half way through cooking so the mixture does not stick to the bottom of the pan.
  2. Once reduced, remove from the heat. Add xanthan gum to thicken further and whisk to combine. Let cool to room temperature.
  3. In a mixing bow, blend the room temperature butter and cream cheese until combined.
  4. Then, add the powdered sweetener bit by bit and blend until fully combined.
  5. Last, add in ¼ cup or 80g of the cooled strawberry puree and blend.
  6. Use straight away or cool in the fridge until suitable for piping onto cupcakes or frosting cakes

Notes

  • Net carbs: 1.2g assuming 12 servings (= enjoyed on 1 of 12 cupcakes or slices of cake).
  • I calculated a generous 50g of frosting per serving. 
  • This recipe makes enough sugar free frosting for a 20cm diameter cake. 
  • My frosting is not overly sweet, which is just how I like it. You can use up to twice the amount of sweetener or even more if you prefer a sweeter frosting. 
  • Guar gum, agar agar or even 1 teaspoon ground chia seeds work in place of the xanthan gum. If you don't want to use thickeners, reduce the strawberry puree as much as you can to make it naturally thick. 
  • Store in the fridge for up to 5 days or freeze for up to 3 months.
