Keto Vanilla Mug Cake

This keto vanilla mug cake combines almond and coconut flours with butter, egg, sweetener, and vanilla extract to create a single-serving low-carb dessert. Microwave cooking results in a soft, moist texture resembling a small vanilla-flavored cake, ready in minutes and convenient for quick treats or portion control.

Description

The recipe uses almond flour balanced with a smaller amount of coconut flour to achieve a cake-like crumb, lifted by baking powder. Melted butter, medium egg, granulated sweetener, and vanilla extract are mixed to form a smooth batter. This is poured into a buttered mug or ramekin to contain the rise.

Cooked in the microwave for 80 seconds at 900W, the cake firms to a tender structure that can be enjoyed directly from the mug or inverted onto a plate. Adjustments to microwave power and baking times accommodate different appliances, detailed in the notes.

This single-serving cake provides a way to enjoy a vanilla-flavored dessert with minimal carbs. The instructions specify equipment size to prevent overflow due to rising batter. The recipe yields about 5 grams net carbs per serving, making it suitable for low-carb or ketogenic diets.

  3. Add the dry ingredients to the wet and stir until a smooth batter forms.

Notes

  • Use a mug or ramekin with at least 200ml capacity to allow room for batter to rise without overflowing.
  • Cooking time varies with microwave wattage: 600W = 100 seconds; 800W = 90 seconds; 900W = 80 seconds; 1000W = 70 seconds. Check doneness and add 10-second increments if undercooked.
  • This recipe yields one serving containing approximately 5 grams net carbs.
