Ingredients

  • 1 cup butter (cold and cut into cubes)
  • 2 cups sugar
  • 2 large egg
  • 1 1/2 Tablespoons lime juice from key limes or regular limes, fresh
  • 1 1/2 Tablespoons lime fresh, zest
  • 1 cup sweetened flaked coconut
  • 3 cups flour
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt

Coconut Lime Frosting:

  • 1 cup butter (softened)
  • 4 ounces cream cheese (softened)
  • 4 cups powdered sugar
  • 1-2 teaspoons coconut extract
  • 1 teaspoon lime juice fresh
  • 2 teaspoons lime fresh, zest

Instructions

  1. Preheat oven to 350 degrees. In a large bowl, cream together butter and sugar for 4 minutes or until light and fluffy.
  2. Add eggs, fresh lime juice, and fresh lime zest and mix for 1 minute longer. Fold in coconut flakes.
  3. Stir in flour, baking powder, baking soda, and salt and mix just until combined. 
  4. Drop dough onto light colored baking sheet. Bake for 9-11 minutes.  If you make the cookies into large cookies (4-6 ounces), you may need to bake the cookies for 10-13 minutes.

Coconut Lime Frosting:

  1. Whip softened butter and cream cheese for 3-4 minutes until light and fluffy. Add powdered sugar, coconut extract, lime juice, and lime zest. Spread frosting on cooled cookies.
