Koeksisters – a traditional Afrikaner confectionery made of fried dough infused in syrup, typical of South Africa.

Ingredients
Syrup
- 800 ml water 3 1/3 cups
- 1 ½ kg sugar 7 1/2 cups
- 3 ½ tsp cream of tartar
- 40 ml lemon juice 2 3/4 tbsp
- 1 cinnamon stick
Dough
- 500 gms cake flour 4 cups
- 25 gms baking powder 1 3/4 tbsp
- 20 gms margarine 1 1/2 tbsp
- ½ egg lightly beaten, large
- 245 ml water 1 cup

- The colder the syrup the better! Make it the day before and place it in the fridge to ensure it is ice cold.You will get more syrup than needed, you can keep it in the fridge for more Koeksisters.
