Lamb Curry

This easy lamb curry recipe is a great way to cook lamb. The succulent, tender lamb cooked in an aromatic curry sauce is simply delicious served with Basmati rice, roti or naan for dinner.

Ingredients

  • lb (750g) lamb Bone-in stewing lamb can also be used, cooking time might just need to be adjusted, boneless
  • 2 tbsp neutral cooking oil generic cooking oil
  • 1 large onion finely chopped
  • 5 garlic crushed, cloves
  • 2 tsp ginger minced
  • 1 tbsp garam masala
  • 1 tsp ground coriander
  • 1 tsp cumin ground
  • 1 tsp Turmeric
  • 2 tsp paprika
  • 1 tsp ground cardamom
  • 14 oz (400g) tomato chopped
  • 3 cups stock or broth
  • 1 tsp sugar
  • 1 tbsp vinegar
  • salt to taste
  • black pepper to taste

Instructions

  1. Pat the lamb dry with paper towels and season generously with salt.
  2. Preheat a large, deep braiser or Dutch oven over medium-high heat.
  3. Add a splash of vegetable oil or ghee then add the lamb and cook in batches until browned on all sides. Remove and set aside.
  4. In the same pot, sauté the onion, garlic and ginger until fragrant then add all the spices.
  5. Allow to cook for 30 seconds then stir in the tomatoes.
  6. Pour in the stock/broth and season generously with salt, pepper and a teaspoon of sugar.
  7. Pour in the vinegar then add the lamb back into the pot.
  8. Cover with a lid, reduce the heat and allow to simmer gently for 90 minutes - 2 hours or until the lamb is fork tender.
  9. Check on the liquid levels every 20 minutes or so to ensure the curry doesn't cook dry.
  10. Once cooked, serve the lamb curry with your favorite side dishes.
