Lasagne (Pasta Sheets)

Lasagne, a specialty of Italian cuisine, are rectangular sheets of egg pasta, that are arranged in layers, and separated by a filling.

Ingredients
- 2½ cups flour , type 00
- 4 eggs
- ½ teaspoon salt
- 1 tablespoon water (or more), at room temperature
- flour , for the worktop
Equipment
- Stand mixer
- Pasta machine
- Fluted pastry wheel
Instructions
- Place the flour into the bowl of a stand mixer fitted with the beater.
- Make a well in the center of the flour, and add the whole eggs, salt and water, then start the mixer.
- Mix at medium speed until you obtain a smooth and homogeneous dough.
- Optionally, add ½ to 1 tablespoon of water, if the dough is too dry.
- Wrap in cling film, and let it rest for 45 minutes in the refrigerator.
- Take the dough out of the refrigerator, and divide it into 4 equal pieces.
- Pass each piece through the pasta machine several times, folding it in half each time, and gradually moving from the widest setting to the thinnest one, until you obtain uniform pasta.
- Place each strip of pasta onto a floured surface, and cut equal-sized rectangles using a fluted pastry wheel.
- Pass the trimmings through the machine to make another strip of pasta.
- Set aside to dry at room temperature for about 15 minutes, then use the lasagne sheets in a recipe of your choice.
