Lemon Chicken

Lemon Chicken is yummy and easy to make, with olive oil, lemons, kosher salt, chicken broth and black pepper.

Ingredients

Servings
  • 2 chicken breast boneless skinless
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 1/2 cup flour
  • 3 tablespoons butter divided, unsalted
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 2 lemon zested and juiced, plural

Instructions

  1. Butterfly the chicken breasts to make 4 thin pieces total.
  2. Season with the salt and pepper before dredging in the flour.
  3. Add two tablespoons of butter and the olive oil to the pan.
  4. Cook chicken until browned and cooked through on medium heat, 3-4 minutes on each side.
  5. Remove the chicken.
  6. Add the remaining butter and 1 teaspoon of the leftover flour to the pan and whisk well. Then add the broth, lemon juice, and zest and cook for 5-6 minutes or until slightly thickened.
  7. Pour the sauce over the chicken pieces and serve. Garnish with additional lemon wedges.
