Lemon Coconut Bars Recipe

Lemon Coconut Bars combine a buttery, golden crust rich with flaked coconut and coconut oil with a tangy, smooth lemon filling enhanced by fresh lemon juice and zest. Baked until just set, the bars offer a contrast between the chewy crust and the bright, slightly firm lemon custard topping. A dusting of powdered sugar adds a touch of sweetness and a delicate finish.

Description

The crust features all-purpose flour, brown sugar, salt, sweetened flaked coconut, cold cubed butter, and coconut oil processed until crumbly, then pressed into a pan and baked until the edges turn golden. This provides a crunchy yet tender base with a subtle coconut flavor.

The filling mixes granulated sugar, whole eggs, fresh lemon juice and zest, flour, and a pinch of salt, creating a smooth lemon custard-like layer. The filling is poured over the warm crust and baked until set but still springy in the center, ensuring a slightly gelled, soft texture rather than a hard custard.

After cooling, the slab is cut into 16 bars and optionally dusted with powdered sugar, which complements the lemon’s tartness. The bars balance sweetness and acidity, with the coconut adding a tropical note to the buttery crust.

Ingredients

Servings

Crust

  • 1 ¼ cups all-purpose flour
  • cup brown sugar
  • ½ teaspoon salt
  • 1 cup sweetened flaked coconut
  • ½ cup butter cut into 1-inch cubes, cold unsalted
  • ¼ cup coconut oil

Filling

  • 1 ¼ cups granulated sugar
  • 5 large egg
  • ½ cup lemon juice fresh, 2 tablespoons
  • 4 teaspoons lemon from 2 large lemons, zest
  • 4 teaspoons all-purpose flour
  • 1 pinch salt
  • powdered sugar to serve

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line 9x9-inch metal baking pan with parchment paper, leaving a little overhang. Combine flour, brown sugar, and salt in a food processor and pulse to mix. Add the coconut, butter, and coconut oil and process until the mixture is crumbly and begins to clump together.
  2. Spread the crust mixture into the bottom of the prepared pan and press down so it forms a crust. Bake crust until golden at edges, about 20 minutes.
  3. In a large bowl, whisk the sugar, eggs, lemon juice, lemon zest, flour, and salt.
  4. Pour filling evenly over hot crust then return the pan to oven and bake until filling is just set and springy to touch in the center, about 20 minutes. Transfer pan to rack and let the pan cool completely.
  5. Using the parchment paper as an aid, transfer the lemon bars to a work surface then cut them into 16 bars. If you'd like, sift a little powdered sugar over the top.
