Lemon Curd Recipe

This lemon curd recipe yields a smooth, rich spread with fresh lemon zest and juice softened by butter and sweetened with sugar. The egg yolks create a thickened custard texture after gentle cooking in a double boiler. The result is a creamy and tangy treat that can be used on breads, desserts, or as a filling.

Description

The Lemon Curd Recipe involves whisking together egg yolks, sugar, lemon zest, and lemon juice before gently cooking them in a double boiler until thickened. The cooking process, which lasts about 8-10 minutes, produces a custard-like consistency. Removing the pot from heat, cold butter is whisked in, which melts into the curd, enriching its creamy texture and flavor.

The curd has a balanced tartness from the lemons and sweetness from the sugar, ideal for spreading on toast, dolloping on scones, or filling pastry shells. A piece of parchment placed on the surface while cooling prevents skin formation, ensuring a smooth final texture.

Once cooled, the lemon curd can be refrigerated and stored for up to 10 days. It is a versatile component in many desserts or a flavorful topping on baked goods.

Ingredients

Servings
  • 5 egg yolk
  • 1 cup white sugar
  • 4 lemon zest and juice, plural
  • ½ cup butter cut into small pieces

Instructions

  1. Add 2 inches of water to the bottom of a double boiler. Bring it to a boil then reduce the heat to medium-low.
  2. In the top pot of the double boiler (before you put it on the heat) add egg yolks, sugar, lemon zest, and lemon juice and whisk until it's smooth.
  3. Put the pot on top of the pot with the simmering water and whisk slowly but constantly for 8-10 minutes, until the lemon curd thickens. Remove from the pot from the heat and whisk in the butter - the heat from the lemon curd will melt the butter.
  4. Pour the lemon curd into a clean glass jar and place a piece of parchment paper directly on the surface of the curd - this will prevent a skin from forming. Once the curd is cool, you can remove it. Refrigerate the lemon curd for up to 10 days.
