Lemon Garlic Salmon
Report
Lemon garlic salmon is a quick recipe perfect for a busy weeknight. Fresh salmon fillets are slathered in a paste of lemon, garlic and Dijon mustard and then grilled to perfection.

Ingredients
- 4 salmon skin off, fillets
- 1½ tbsps olive oil
- 1 tablespoon lemon juice fresh
- lemon zest finely grated
- 2 garlic finely grated, cloves
- 1 teaspoon Dijon mustard
- ½ teaspoon salt cooking
- parsley optional garnish, finely chopped
- Parmesan Cheese optional garnish, grated fresh
- lemon optional garnish, slices
Instructions
- Line a baking tray with foil and set aside.
- In a medium bowl, combine olive oil, lemon juice, lemon zest, garlic, mustard and salt.
- Add salmon fillets to the bowl with the lemon mixture and turn to coat.
- Pre-heat your grill or broiler to 280c (or as high as it goes) and place the shelf 20cm away from the heat source/element (see my notes).
- Place salmon onto the lined tray, leaving a little space between each fillet.
- Place the baking tray under the grill and cook for 11 minutes, or until the salmon is cooked and the flesh flakes apart when tested with a fork.
- Sprinkle with finely chopped parsley and grated parmesan (if using) and serve with extra lemon slices.
Notes
- *Please note that the amount of calories per serve is provided as a guide only, as ingredients and cooking methods can vary greatly*
- My grill is a separate compartment underneath my oven, and if I take out the shelf I can sit my baking tray directly on the base so it's 20cm from the element.
- I suggest lining your baking tray with foil (rather than the usual parchment/baking paper) as it can scorch under the direct heat.
