Lemon Mini Babkas (Babeczki)

Lemon Mini Babkas are small bundt cakes made with eggs, butter, oil, yogurt, sugar, and flour, flavored with lemon zest. The batter produces tender, moist mini cakes baked in a mini bundt pan until golden and lightly dusted with powdered sugar for a bright finish.

Description

This recipe blends caster sugar, eggs, softened butter, vegetable oil, lemon zest, and plain yogurt to create a rich and flavorful batter. Cake flour and baking powder provide tenderness and leavening, while a pinch of salt balances sweetness. The mixture is whisked and gently folded with the dry ingredients before being poured into mini bundt trays coated with cake release spray.

The cakes bake at 180°C (350°F) until lightly golden and a tester comes out clean, maintaining moistness with a soft crumb. A dusting of powdered sugar after cooling adds a subtle sweetness and decorative touch. These mini babkas capture lemon's bright flavor in individual portions perfectly suited for snacks or dessert.
