Lemon Poppy Sugar Cookies Recipe

These Lemon Poppy Sugar Cookies blend buttery dough with bright lemon zest and juice, speckled with poppy seeds for subtle crunch. After chilling and rolling, the cookies bake to a soft texture with lightly browned edges. They are decorated with a lemon-flavored icing tinted in red, black, and white to create a poppy flower design, making them as visually appealing as they are flavorful.

Description

The Lemon Poppy Sugar Cookies start with a dough of butter, icing sugar, vanilla, lemon zest, lemon juice, flour, salt, and poppy seeds, providing a delicate lemon flavor combined with the unique crunch of poppy seeds. After chilling the dough, it is rolled out and cut into shapes before baking, yielding cookies with a tender crumb and gentle crisping at the edges.

Once cooled, the cookies are decorated with a lemon-flavored icing in multiple colors to replicate poppy flowers, adding an artistic touch. The lemon icing is made by mixing icing sugar and lemon juice, then tinted accordingly. The detailed decoration involves outlining and filling parts of the cookie to create the flower petals and center.

These cookies make a flavorful treat for gatherings, special occasions, or a sophisticated sweet snack. The preparation includes ample time for chilling and decorating, which can be a collaborative and patient effort, especially when precise icing work is involved.

Chilling the dough before rolling and again before baking helps maintain the cookie shapes. The decorating process requires additional time and care, so planning ahead is beneficial if making these for events.

Ingredients

Servings
  • ½ cup butter at room temperature
  • ¾ cup icing sugar
  • 1 teaspoon vanilla extract
  • 1 ½ tablespoons lemon finely grated zest
  • 2 tablespoons lemon juice
  • 1 tablespoon poppy seeds
  • 2 cups flour plus more for rolling the dough
  • ½ teaspoon salt

Decorating the Cookies

  • 4 cups icing sugar
  • 2 tablespoons lemon juice
  • Food Coloring red and black
  • poppy seeds for sprinkling

Instructions

  1. Beat the butter, sugar, vanilla, lemon zest and juice until combined. Beat in flour, salt, and poppy seeds. Form dough into a ball, wrap in plastic wrap and refrigerate until firm, at least 2 hours
  2. Preheat oven to 350 degrees
  3. Turn dough out onto a lightly floured surface and roll out to ¼-inch thickness. Cut out cookies using 2 or three different size cookie cutters. Transfer to a baking sheet and refrigerate for 30 minutes
  4. Bake until the edges just start to brown, 10-12 minutes. Remove from oven and cool completely

Make frosting:

  1. Mix the icing sugar and lemon juice in a medium-sized bowl. Add more lemon juice if too thick or more icing sugar if too thin. Tint a large portion red, a small portion black, and leave the remaining white

Decorate:

  1. Trace an outline around the cookie with the red icing, following the poppy shape. Pipe a dot of icing into each of the petals and feather to cover each petal. Immediately make a circle with small dots in the middle with the white icing. Using a toothpick draw the white icing to the edges of the poppy. Once the icing is set, pipe a large white dot in the center of each cookie. Once the dot is set, pipe a black line around the dot and immediately sprinkle with poppy seeds. Allow the frosting to set completely before storing.

Notes

  • Chill the dough thoroughly before rolling to ensure easier handling and better cookie shape retention during baking.
  • Allow cookies to cool completely before starting the decorating process to prevent melting the icing.
  • Decorating with colored icing requires patience; enlisting help can make this step more enjoyable and faster.
