The Lemon Rosemary Broiled Swordfish recipe uses swordfish steaks about an inch thick, marinated in a mixture of melted butter, garlic, olive oil, lemon juice and zest, and finely chopped fresh rosemary. Marinating for 20 minutes or up to an hour imparts a delicate balance of buttery richness and fresh herb-citrus flavor that complements the firm texture of the fish.

Broiling cooks the swordfish quickly, about 2-3 minutes per side, preserving moisture while creating a lightly seared surface. An optional grilling method also basts the fish with the marinade and cooks at high heat for a similar effect.

Ingredients

  • 1 lb swordfish 1-inch thick pieces
  • 2 tbsp butter melted
  • 3 cloves garlic chopped
  • 1 lemon juice and zest
  • 1 tbsp olive oil
  • 1 prig rosemary finely chopped (1 tbsp)
  • pinch salt

Instructions

  1. Rinse and pat dry the swordfish steaks. Set aside.

Fish Marinade

  1. Crush and chop the garlic. In a small bowl whisk together the melted butter, olive oil, garlic, zest of half the lemon and the juice. 
  2. Add rosemary to the melted butter mixture and pour over the swordfish in a plastic zip bag or container to marinate for 20 minutes or up to an hour tops. (See Note 1).

Broiled Swordfish

  1. Preheat oven broiler. Place marinated swordfish on a rimmed baking sheet or oven safe grill pan.
  2. Place under the broiler and cook fish for 2-3 minutes on first side, then use fish spatula to carefully flip swordfish steak over. Baste with additional marinade if desired and broil second side for 2-3 minutes. (See Note 2)

Grilling Option

  1. Preheat grill to 500°F.  Place swordfish on cleaned grill grates. Drop heat to 400°F and baste with reserved marinade.
  2. Cook fish on first side for 2-3 minutes, use a fish spatula to gently flip it over, then grill the second side for 2-3 minutes. (See Note 2)

Notes

  • Re-massage the swordfish and marinade bag if butter solidifies to mix flavors evenly.
  • Broil or grill the swordfish only for the recommended 2-3 minutes per side to keep the fish moist and tender.
