Liège Waffle

The Liège waffle ("gaufre de Liège") or wåfe, is a specialty of the city of Liège in Belgium, that is based on leavened dough and pearl sugar, which caramelizes while cooking.

Ingredients

  • 4 cups flour , sifted
  • 1 tablespoon active dry yeast
  • ½ cup water at 97 F / 36°C, warm, or milk
  • ½ cup caster sugar
  • 3 egg
  • 1 cup butter , melted
  • ¼ teaspoon ground cinnamon (or vanilla extract)
  • ¼ teaspoon salt
  • cup pearl sugar

Equipment

  • Stand mixer
  • rolling pin
  • Waffle iron

Instructions

  1. In the bowl of a stand mixer, combine the yeast in water (or milk).
  2. Add half of the flour 2 cups), the eggs, 2 tablespoons of butter and the sugar. Mix until everything is combined.
  3. Sprinkle with the remaining flour and butter and the cinnamon (or vanilla).
  4. Let sit for 30 minutes in a warm place away from drafts.
  5. Using the dough hook, knead everything and add more flour if necessary. The dough should not be sticky.
  6. Let stand for 15 minutes in a warm place, away from drafts,
  7. Roll out the dough to a thickness of ½ inch (1 cm) using a rolling pin and sprinkle the whole surface with pearl sugar.
  8. Roll it on itself.
  9. Divide the dough into 12 pieces, and let them rest for 15 minutes.
  10. Bake the waffles in a waffle iron until golden, about 2 to 3 minutes per side.
