Lime Coconut Ice Cream Recipe

Lime Coconut Ice Cream blends rich coconut milk with fresh lime juice and zest to create a creamy frozen dessert with bright citrus notes. Sweetened with coconut sugar or alternatives, this non-dairy ice cream offers a smooth texture enhanced by an optional blending step, delivering a refreshing tropical flavor and soft, creamy consistency.

Description

This recipe heats coconut milk with coconut sugar (or honey or granulated sugar) until dissolved, then incorporates fresh lime juice and zest for a citrus aroma and taste. An optional blending step ensures the mixture is smooth before chilling. The cooled mixture is then churned in an ice cream maker according to manufacturer instructions until it reaches the right texture.

The ice cream’s creaminess comes from the full-fat coconut milk, while the lime provides a zesty contrast that cuts through the richness. The balance of sweet and tart flavors results in a refreshing dessert ideal for warm weather or when a tropical flavor is desired.

After churning, the ice cream is frozen for about two hours until fully firm, ready to be scooped and served. Using the highest-fat coconut milk available helps achieve a smooth mouthfeel.
