Lime Posset
Description
Lime Posset combines heavy cream and sugar heated until boiling to dissolve the sugar. After boiling for three minutes, the mixture is removed from heat and fresh lime juice and half the lime zest are stirred in, balancing the rich cream with citrus brightness. The mixture is cooled briefly before pouring into serving glasses that already contain a layer of graham cracker crumbs.
Refrigerating the posset allows it to set into a creamy, smooth pudding-like consistency. The garnishing options include additional lime zest, more graham cracker crumbs, fresh lime wedges, or berries to enhance appearance and texture. The graham cracker crumbs provide a contrasting texture to the smooth posset and a subtle sweetness that complements the tart lime.
This dessert works well as a light, refreshing finish to a meal with its creamy yet tangy flavor. It can be prepared ahead of time, making it suitable for entertaining or meal prep. The use of lime juice and zest gives it a fresh, citrus character distinct from richer desserts.

Ingredients
- 16 ounces heavy cream or double cream
- 3/4 cup sugar 5.25 ounces
- 5 Tablespoons lime about 2-3, fresh juice and zest
- 6 Tablespoons graham cracker crumbs
Instructions
- In a medium sized, heavy bottomed pan, bring cream and sugar to boil over a medium-high heat, stirring until sugar dissolves.
- Reduce heat to medium, and boil 3 minutes, stirring constantly, adjusting heat as needed to prevent mixture from boiling over. Remove from heat.
- While posset is cooling, fill each serving glass with 1 Tablespoon graham cracker crumbs
- Stir in lime juice and half the lime zest, and allow to cool for 10 minutes.
- Pour posset into serving glasses or ramekins and cover with plastic wrap.
- Chill for one hour or more. Posset can be made a day before.
- To garnish lime posset use remaining zest, more graham cracker crumbs, small lime wedges or fresh berries.
Notes
- Substitute regular limes with key limes when in season for additional flavor intensity.
- This recipe can be doubled easily to serve more guests.
- Prepare the posset ahead and chill it for at least one hour or up to a day before serving.
