Ingredients
- 300 g Little gem lettuce cut in half lengthways
- 0.5 tablespoon olive oil
- 1 pinch sea salt and ground black pepper
- 1 red onion thinly sliced
- 6 cherry tomatoes halved
- 1 avocado cut into wedges
- 3 radishes thinly sliced
- 30 g feta crumbled
- 8 tablespoon Lemon Vinaigrette
- 1 tablespoon pine nuts (optional)

Instructions
- Lightly brush the cut sides of 300 g Little gem lettuce with 0.5 tablespoon Olive oil and season 1 pinch Sea salt and ground black pepper. Put cut side down on to a hot griddle pan and cook for 2 minutes. Depending on the size of your pan, this might need to be done in batches.
- Add 1 Red onion, 6 Cherry tomatoes, 3 Radishes and 1 Avocado.
- Pour over 8 tablespoon Lemon vinaigrette and use your hands to mix everything, making sure everything is coated with the dressing. Finish with 30 g Feta (crumbled) and 1 tablespoon Pine nuts.
