Description
Low Carb Keto Banana Bread combines almond flour, mashed bananas, eggs, melted butter, cinnamon, and a granulated sweetener to create a batter that supports keto dietary needs by reducing traditional flour and sugar. Baking powder provides leavening, while walnuts add texture and nutty notes. After mixing wet and dry ingredients, the dough is poured into a parchment-lined small loaf pan and topped with extra walnuts before baking at 180°C (356°F) for about 40 minutes, checking to avoid over-browning by shielding the top if necessary.
The bread’s texture is dense yet moist, with the sweetness coming mainly from the ripe bananas and sweetener, and it slices cleanly once cooled. It pairs well with butter or cream cheese for a low carb breakfast or snack.
This recipe yields about 4 grams net carbs per slice and allows substitutions such as different nuts or sugar-free chocolate chips. For larger loaf pans, doubling ingredients and increasing baking time is advised.
Ingredients
- 1 ½ cup almond flour or ground almonds, 150g
- ½ cup banana 2 small or 1 large, very ripe, 120g, mashed
- 3 egg large
- 2 tablespoon butter 28g, melted
- ¼ cup granulated sweetener 50g
- 2 teaspoon cinnamon
- 1 teaspoon baking powder
- ¼ cup walnut 30g, crushed
Instructions
- Preheat the oven to 180 Celsius / 356 Fahrenheit.
- Using an electric mixer, beat the eggs together with the mashed banana and melted butter until smooth.
- In another bowl, stir together the dry ingredients - almond flour, erythritol or sweetener of choice, cinnamon and baking powder. Add to the bowl with the egg/banana/butter mix and blend until well-combined.
- Last, stir in the crushed walnuts, reserving some to sprinkle over the top of the bread.
- Line a small (7 x 3.5 inch / 1 lb) loaf tin with parchment paper and fill in the dough. Sprinkle the leftover walnuts on the top.
- Bake for approximately 40 minutes or until a knife inserted comes out clean. Check the cake at minute 30. If the top is already brown enough, loosely place aluminium foil over it so it does not burn.
- Let the banana bread cool completely before slicing.
Notes
- Each slice has approximately 4g net carbs, suitable for keto diets.
- Walnuts can be replaced with other nuts or omitted; sugar-free chocolate chips are an alternative.
- A pinch of nutmeg complements the banana flavor well.
- If using a standard 9x5 inch loaf pan, double the recipe and bake for 55-60 minutes.
- Allow the bread to cool fully before slicing for clean cuts.
- One slice weighs about 60 grams.
