Mahalabia

Mahalabia is a type of milk pudding from the Middle East that is flavored with rose or orange blossom water, and garnished with chopped nuts.

Ingredients

Servings
  • 4 cups milk whole
  • ¾ cup cornstarch
  • ½ cup caster sugar
  • 4 tablespoons orange blossom water
  • 1 teaspoon gum arabic , crushed
  • 4 tablespoons pistachio crushed
  • 3 tablespoons mineral water

Instructions

  1. In a bowl, dilute the cornstarch in mineral water, and mix well until any lumps have disappeared.
  2. In a non-stick saucepan over a medium heat, combine the milk and cornstarch, stirring continually until thickened.
  3. Add the sugar, orange blossom water and gum arabic, and let boil for another 2 minutes while continuing to stir.
  4. Continue to mix until the custard thickens, and the desired texture (thin or thick) is obtained.
  5. Divide into ramekins, let cool to room temperature, then place in the refrigerator for a few hours to chill.
  6. When ready to serve, sprinkle with crushed pistachios.
