Malteser Bunny Brownies

Indulgent malty chocolate brownies topped with Mini Malteser bunnies to make an adorable Easter treat.

Ingredients

Servings
  • 200 g dark chocolate 70% cocoa
  • 180 g butter
  • 250 g caster sugar
  • 3 egg medium
  • 1 Teaspoon vanilla extract
  • 100 g plain flour
  • 1 Tablespoon cocoa powder
  • 110 g maltesers
  • 100 g white chocolate chips

Topping:

  • 50 g white chocolate melted
  • 9 maltesers mini, bunny shaped
  • 9 carrot optional, edible decorations

Instructions

  1. Preheat your oven to 160°C (140°C if you're using a fan oven) and line an 8x8-inch tin with baking paper.
  2. Melt the dark chocolate and the butter together over low heat on the stove then set aside to cool for 10 minutes.
  3. Add the sugar, eggs and vanilla extract to a large bowl. Using an electric whisk, whisk it all together for a few minutes until pale and increased in volume.
  4. Fold the melted chocolate mixture into the whisked mixture. Then add the flour and the cocoa powder and mix gently until well combined.
  5. Mix the Maltesers and chocolate chips into the brownie batter. Then transfer it to your tin and spread it out evenly.
  6. Bake for around 35-40 minutes until the brownies have risen and are pulling away from the tin slightly. There should be a very slight wobble in the middle.
  7. Leave the brownies in the tin until cool then pop them in the fridge overnight. This will make them ultra fudgy and chewy.
  8. Once set, remove the brownies from the tin and drizzle the melted white chocolate over the top. Use this as a 'glue' to stick the bunnies on.
  9. Use more white chocolate to stick the carrot decorations on top of the Malteser bunnies.
  10. Let the chocolate set then cut the brownie into slices and enjoy!

Notes

  • Store in an airtight container in the fridge for up to 1 week.
  • Although these brownies look cute with an entire bunny stuck on the middle, they are very indulgent so I recommend cutting each slice into 2 to make 18 servings.
