Malva Pudding (South African Baked Dessert)

Malva pudding is a classic South African dessert featuring a spongy, sweet cake made with apricot jam and a dash of vinegar in the batter. It’s baked until golden and then soaked with a rich, buttery sauce made from cream, sugar, butter, hot water, and vanilla. The pudding absorbs the sauce, resulting in a soft, moist texture with a balance of sweet and tangy flavors.

Description

Malva Pudding (South African Baked Dessert) combines a sweet, sponge-like cake batter enriched with apricot jam and a hint of brown vinegar to give it a subtle tang. The cake is baked until it develops a golden crust and a tender interior. Complementing the pudding is a buttery sauce composed of cream, sugar, butter, hot water, and vanilla essence, which is poured over the warm cake allowing it to soak thoroughly. This soaking step ensures the pudding remains moist and flavorful throughout.

The resulting dish offers a harmonious balance between sweet and slightly acidic notes with a creamy sauce enhancing the texture and taste. Traditionally served warm, it pairs excellently with custard, vanilla ice cream, or whipped cream, making it a comforting dessert choice.

For serving, you can prepare individual portions by using a cookie cutter to neatly cut the pudding once it has cooled a bit and absorbed the sauce. This approach can make the dessert easy to present or serve at gatherings.

Ingredients

Servings

For the batter

  • 1 tablespoon butter (at room temperature)
  • 1 cup sugar
  • 2 egg
  • 1 tablespoon apricot jam
  • 1 teaspoon baking soda
  • ½ cup milk
  • ¼ cup brown vinegar (e.g. malt or balsamic vinegar)
  • 1 cup flour , sifted
  • ¼ teaspoon salt

For the sauce

  • 1 cup heavy cream
  • ¾ cup sugar
  • 8 tablespoons butter
  • ½ cup water hot
  • 1 teaspoon vanilla essence

Instructions

  1. Preheat oven to 350 F / 180 C.
  2. Whip butter with sugar for 2 minutes. Then, add the eggs one at a time, and continue to whip well after after each addition.
  3. Add the apricot jam and mix well.
  4. Then, add the milk and the baking soda, then the brown vinegar.
  5. Add the sifted flour gradually and continue to mix.
  6. Pour batter into a 9-inch ( 22 cm) square greased baking pan.
  7. Bake for 45 minutes in the oven or until an inserted toothpick comes out clean.
  8. While the malva pudding is baking, mix all the sauce ingredients in a saucepan on medium/high heat.
  9. Bring to a boil, then remove from heat. Cover.
  10. Remove the pudding from the oven, then pour the sauce on top. Set aside for 15 minutes before serving so that the cake has time to absorb the sauce to saturation.
  11. Serve with custard (like creme anglaise), vanilla ice cream or whipped cream.

Notes

  • Use a cookie cutter to create individual serving portions once the pudding has cooled and absorbed the sauce.
