Description

The Mango Chutney recipe involves cooking diced mangoes with a blend of spices such as garam masala and mustard seeds, together with garlic and ginger pastes. Cooking starts with sautéed onions, which are softened in oil, then spices and pastes are added before combining the mango chunks, sugar, and distilled white vinegar. The chutney simmers uncovered for about an hour, developing a thick and chunky texture while the flavors integrate. Optionally, red chili flakes can add a subtle heat.

  • 2 Mango about 250g/9oz each); chopped into 1cm/half inch cubes, large
  • 1 teaspoon neutral cooking oil generic cooking oil
  • 1 onion small; diced
  • 0.5 teaspoon mustard seeds
  • 125 ml white vinegar distilled
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 teaspoon garam masala
  • 200 g sugar
  • 1 pinch red chili flakes optional

Instructions

  1. Heat 1 teaspoon Oil in a large pan over a low heat. Add 1 Onion and cook for 5 minutes.
  2. Add 1 teaspoon Garlic and ginger paste. Cook for a further minute.
  3. Add 1 teaspoon Garam masala, 0.5 teaspoon mustard seeds and 1 pinch Red chilli flakes (if using). Season with a little salt and cook for 2 minutes.
  4. Add 2 Large mangoes, 200 g Sugar and 125 ml Distilled white vinegar.
  5. Simmer uncovered for an hour. Mash any of the larger mango chunks with the back of a wooden spoon or potato masher.

Notes

  • Let the chutney cool and rest in the fridge for a few hours to enhance flavor blending before serving.
  • Sterilize jars thoroughly if preserving the chutney or using it as gifts to ensure freshness.
  • You may blend the chutney for a smoother texture if preferred rather than the traditional chunky style.
