Description

For traditional preparation, the mixture is churned in an ice cream maker for around 40 minutes to achieve a soft-serve texture. Alternatively, if an ice cream maker is unavailable, the mixture can be frozen in a container and stirred hourly to prevent ice crystals and incorporate air, maintaining creaminess.

Additional flavorings like lime, lemon, vanilla, or coconut extracts can be added according to preference. For a chunkier texture, reserving some mango pieces and folding them in after pureeing is recommended. The ice cream keeps well in an airtight container in the freezer for up to two weeks but can freeze quite hard, so letting it soften slightly before serving is advised.

  • 14 oz coconut milk can
  • ½ cup sugar
  • 2 Mango peeled and cubed, ripe, about two medium mangos

Instructions

  1. Put all ingredients in a food processor or blender
  2. Process until smooth
  3. Pour the mango mixture into the bowl of an ice cream maker and process about 40 minutes for a soft serve consistency.
  4. Serve right away, or put in an airtight, freezer safe container for an hour for a firmer ice cream.
