Mango Coconut Ice Cream
Description
This ice cream combines ripe mangoes peeled and cubed with canned coconut milk and sugar. The ingredients are pureed together until smooth, creating a base that is both fruity and creamy due to the mango’s natural sweetness and the richness of the coconut milk.
For traditional preparation, the mixture is churned in an ice cream maker for around 40 minutes to achieve a soft-serve texture. Alternatively, if an ice cream maker is unavailable, the mixture can be frozen in a container and stirred hourly to prevent ice crystals and incorporate air, maintaining creaminess.
Additional flavorings like lime, lemon, vanilla, or coconut extracts can be added according to preference. For a chunkier texture, reserving some mango pieces and folding them in after pureeing is recommended. The ice cream keeps well in an airtight container in the freezer for up to two weeks but can freeze quite hard, so letting it soften slightly before serving is advised.
Ingredients
- 14 oz coconut milk can
- ½ cup sugar
- 2 Mango peeled and cubed, ripe, about two medium mangos
Instructions
- Put all ingredients in a food processor or blender
- Process until smooth
- Pour the mango mixture into the bowl of an ice cream maker and process about 40 minutes for a soft serve consistency.
- Serve right away, or put in an airtight, freezer safe container for an hour for a firmer ice cream.
Notes
- Freeze the ice cream maker bowl overnight before use for proper churning.
- If no ice cream maker is available, freeze the mango mixture in a container and stir every hour to reduce ice crystals and incorporate air.
- For chunkier ice cream, set aside some mango chunks and fold in after pureeing the rest.
- Optional flavor additions include lime juice, lemon juice, vanilla extract, coconut extract, or coconut flakes.
- The ice cream made in the machine will be soft serve; freeze longer for firmer texture before serving.
- Store in an airtight container for up to two weeks; let soften at room temperature before scooping if frozen hard.
