Mango Dessert (Mango Pomelo Sago)

Mango Pomelo Sago is a chilled dessert blending smooth mango puree, translucent sago pearls, pomelo pulp, and creamy coconut milk. Sweetened and flavored with pandan leaves, the dessert delivers a creamy, refreshing texture with fruity accents. Additional mango cubes and fresh mint brighten the presentation and taste.

Description

This dessert emphasizes the natural sweetness and creamy texture of ripe mangoes, blended with evaporated milk and water to form a smooth puree. The sago pearls cook until translucent, providing a chewy contrast, while the pomelo adds a slightly tart, juicy component. The coconut milk cooked with sugar, salt, and pandan leaves provides a mild richness and aromatic depth to the mixture. Chilling the combined ingredients allows flavors to meld and gives the dessert a cool, refreshing quality. Garnishing with mango cubes and mint leaves adds fresh texture and color, making it both visually appealing and texturally balanced.

Preparing the sago carefully and blending mango thoroughly are key steps for achieving the ideal smooth texture and consistency. The dessert benefits from resting in the refrigerator to enhance flavor harmony and temperature.

Ingredients

Servings
  • 1 cup pomelo pulps
  • 2 Mango ripe, peeled and sliced
  • 1/3 cup evaporated milk
  • 1/3 cup water
  • 3 1/2 cups water for boiling
  • 1/2 cup sago pearls
  • 1/2 cup coconut milk
  • 1/4 cup sugar or more to taste
  • Pinch salt
  • 2 pandan leaves knotted
  • 1 Mango additional, peeled and cut into cubes
  • mint leaves for decorating

Instructions

  1. Peel the pomelo and carefully separate the pulps. Set aside.
  2. Blend the mangoes, evaporated milk, and water until you achieve a smooth mango puree.
  3. In a small pot, bring water to a boil. Add the sago pearls and simmer on low heat for 10 minutes. Turn off the heat and cover the pot with its lid. Let it sit for 15 minutes; the sago pearls should turn translucent. Drain the pearls using a strainer and rinse with cold water to remove any excess starch.
  4. In a small pot over low heat, simmer the coconut milk, sugar, salt, and pandan leaves until the sugar dissolves. Discard the pandan leaves.
  5. To make Mango Pomelo Sago, combine the mango puree, sago, and coconut milk in a bowl. Stir well to mix. Chill in the refrigerator for at least 2 hours.
  6. To serve, transfer the mango dessert to individual bowls. Top with mango cubes, pomelo pulps, and mint leaves.

Notes

  • Select fully ripe, sweet mangoes to ensure the dessert’s natural sweetness and creamy texture.
  • Blend mangoes thoroughly to avoid coarse fibers or chunks for a smooth puree.
  • Cook sago pearls until fully translucent, rinse well, and chill the mixture for at least two hours for the best refreshing taste.
