Mango Sago

Mango Sago combines small tapioca pearls with a smooth mango and coconut milk puree, sweetened lightly and chilled. The dessert offers a creamy texture punctuated by chewy tapioca and juicy diced mango garnishes. Refreshing and rich, it’s often served as a cool treat highlighting tropical fruit flavors.

Description

Mango Sago is a chilled dessert featuring tapioca pearls cooked until translucent and tender, then cooled and combined with a puree made from ripe mangoes, coconut milk, and sugar. The smooth mango mixture contributes sweetness and creaminess, balancing the subtle chew of the sago pearls. A diced mango garnish adds fresh fruit texture and bright color. Preparation involves boiling the tapioca pearls until soft, then rinsing to remove starch. The mango flesh is pureed with coconut milk and sugar, creating a luscious base. After mixing with the sago, the dessert is refrigerated to chill before serving.

This dessert is best enjoyed cold, especially on warm days, offering a soft, creamy mouthfeel and tropical flavors with every spoonful. The combination of coconut and mango gives it a comforting yet vibrant profile.

If the mangoes are fibrous, straining the puree removes stringy bits for a smoother consistency, enhancing the eating experience.

Ingredients

Servings
  • water
  • ¼ cup tapioca pearls small
  • 5 Mango
  • ½ cup coconut milk
  • ¼ cup sugar

Instructions

  1. In a large pot over medium heat, bring water to a boil. Add tapioca pearls and cook, stirring regularly, for about 7 to 10 minutes. Turn off the heat and cover. Let tapioca pearls stand in hot water until translucent and cooked through.
  2. In a colander, rinse cooked sago under cold running water to remove excess starch. Drain well and let cool completely. This would be about 1 cup cooked sago.
  3. Peel mangoes and cut flesh from pits. Cube the flesh of four mangoes. Dice the flesh of the remaining 1 mango and set aside to use as garnish.
  4. In a blender or food processor, combine cubed mango flesh from the 4 mangoes, coconut milk, and sugar. Process until smooth and thick.
  5. Combine mango puree and sago.  Chill in the refrigerator until ready to serve.
  6. Divide mango sago into serving bowls and garnish with diced mangoes. Serve immediately.

Notes

  • Strain the mango puree through a fine sieve if the fruit is fibrous to ensure smooth texture.
