  • 1 pound Mango from about 2-3 fresh large mangoes, diced
  • 1/4 cup cilantro leaves
  • 1/4 cup lime juice freshly squeezed
  • 1/3 cup extra virgin olive oil
  • 1 inch ginger piece
  • 1 teaspoon red pepper flakes
  • 1 tablespoon honey
  • 2 teaspoons sofrito or 2 cloves of garlic, Brazilian style
  • salt to taste
  • black pepper to taste

Instructions

  1. Add the diced mangos to the blender (or food processor) with the cilantro, lime juice, olive oil, ginger, red pepper flakes, honey and Brazilian sofrito to a blender. Season with salt and pepper.
  2. Blend until smooth. Taste and add additional salt and pepper, if necessary.
  3. Serve or store
