Mango Salad Dressing
Description
Mango Salad Dressing combines diced fresh mangoes with herbaceous cilantro and zesty lime juice to create a lively base. Ingredients
- 1 pound Mango from about 2-3 fresh large mangoes, diced
- 1/4 cup cilantro leaves
- 1/4 cup lime juice freshly squeezed
- 1/3 cup extra virgin olive oil
- 1 inch ginger piece
- 1 teaspoon red pepper flakes
- 1 tablespoon honey
- 2 teaspoons sofrito or 2 cloves of garlic, Brazilian style
- salt to taste
- black pepper to taste
Instructions
- Add the diced mangos to the blender (or food processor) with the cilantro, lime juice, olive oil, ginger, red pepper flakes, honey and Brazilian sofrito to a blender. Season with salt and pepper.
- Blend until smooth. Taste and add additional salt and pepper, if necessary.
- Serve or store
