Description

Mango yogurt popsicles bring together plain or vanilla yogurt with ripe mango pieces blended into a smooth mixture sweetened with sugar, banana, or honey. The mixture is poured into molds or small cups to freeze, creating popsicles that balance the tanginess of yogurt with the natural sweetness and tropical flavor of mango.

The popsicles develop a creamy texture and a refreshing flavor, made possible by the combination of dairy and fruit. Adding mango chunks is an option for a chunkier texture and more pronounced mango bites in the finished popsicles.

These frozen treats are ideal for a cool snack on warm days. To remove the popsicles easily, dipping the molds briefly in lukewarm water loosens them without melting. Frozen mango chunks can be substituted for fresh mango when out of season.

Ingredients

  • 3 cups PLAIN yogurt or vanilla yogurt - omit honey
  • 4-5 Mango about 20 oz after peeled/sliced, cut into pieces - can also use frozen mango chunks, ripe
  • ¼ to ½ cup sugar can also use a banana to sweeten, or honey

Instructions

  1. Combine all the ingredients in a blender and mix until you have a smoothie like mix. Taste and add additional honey (or sugar) if needed.
  2. Pour the mango yogurt mix into popsicle molds or small paper/plastic cups. If you using small cups as popsicle molds you can cover them with foil and insert the popsicle stick thru the foil to keep them in place. Or let them freeze for about an hour and then add the sticks.
  3. Place the popsicles in the freezer until they are fully frozen, about 4 hours (more or less depending on your freezer’s temperature). To make it easier to remove them from the molds or cups, you can dip the bottom of the mold in lukewarm water for about 10-20 seconds.

Notes

  • For a chunkier texture, add small mango pieces into the popsicle mixture before freezing.
  • You can use frozen mango chunks if fresh mango is unavailable; thaw slightly before blending.
