Mary Berry's Ginger Cake Recipe

This ginger cake from Mary Berry is a moist, spiced cake made with dark brown sugar, black treacle, and golden syrup for deep sweetness and moist texture. Ground ginger and mixed spices give the batter warm, aromatic notes, while bicarbonate of soda helps it rise. The cake is baked in a rectangular tin and served in slices once cooled. It is a flavorful cake suitable for teatime or dessert.

Description

Mary Berry's Ginger Cake blends self-raising flour with ground ginger and mixed spices to produce a spiced batter. The combination of butter, dark brown sugar, black treacle (or molasses), and golden syrup (or honey) contributes to a rich, moist crumb and deep caramel-like flavors. The mixture is gently heated to melt the butter and sugars before combining with eggs and milk to form a smooth batter. The cake is baked in a lined rectangular tray until a skewer comes out clean.

This cake offers a tender texture with warm ginger and spice notes, complemented by the syrupy sweetness from treacle and golden syrup. It slices well and can be enjoyed plain or with accompaniments like cream or custard.

The recipe accommodates ingredient substitutions such as pumpkin spice for mixed spices and honey for golden syrup, which may be useful depending on regional availability. The batter should be lump-free before baking.

Ingredients

Servings
  • 225 g self-raising flour
  • 100 g butter
  • 100 g dark brown sugar
  • 100 g black treacle (or molasses)
  • 100 g golden syrup (or honey)
  • 1 egg
  • 2 tablespoon ground ginger
  • 1 teaspoon mixed spices (pumpkin spice)
  • 1 teaspoon bicarbonate of soda
  • 275 ml milk

Instructions

  1. In a sauce pan set over a low heat, add the butter cut into cubes, sugar, black treacle and golden syrup.
  2. Use a spatula to mix gently until the butter is melted and the mixture is smooth.
  3. Remove from the heat and let it cool slightly.
  4. In a large bowl, sift the flour, add the bicarb of soda, ginger and mixed spices, treacle mixture, beaten egg and milk.
  5. Mix well to get a lump-free batter.
  6. Line a 32x20 cm (12x8 inches) baking tray with non-stick paper, and spread the batter evenly.
  7. Bake in the preheated oven at 180 degrees Celsius (350 Fahrenheit) for 30 minutes or until a skewer inserted in the middle comes out clean.
  8. Remove from the oven, leave to cool completely, then slice.

Notes

  • Substitute pumpkin spice for mixed spices if unavailable, creating a pumpkin-spice variation.
  • Golden syrup can be replaced with honey, and black treacle with molasses, without altering texture or taste substantially.

  • Adjust ingredient quantities according to desired servings as indicated.
