Mascarpone Roasted Peaches

This Mascarpone Roasted Peaches recipe features halved ripe peaches roasted with honey until tender and caramelized. The peaches are topped with a creamy mixture of mascarpone, vanilla sugar, and lemon juice for a balanced sweetness and slight tang, making it an elegant dessert.

Description

Large ripe peaches are halved and pitted before being placed cut side up in a baking dish. They are drizzled with honey and roasted in a hot oven until softened and slightly caramelized. The roasting helps concentrate their natural sweetness and softens their flesh.

Once roasted, the peaches are topped with a smooth, sweetened mascarpone mixture flavored with vanilla sugar and lemon juice, which adds a subtle tang and aromatic notes to balance the richness of the mascarpone and honey.

This dessert can be served immediately while the peaches are still warm, offering a contrast between the soft, juicy fruit and the creamy topping. It pairs well with a scoop of vanilla ice cream or a sprinkle of toasted nuts if desired.

Using mature, ripe peaches ensures the pits separate easily from the flesh, facilitating the preparation. Vanilla sugar can be substituted with a few drops of vanilla extract cautiously to avoid overpowering the delicate flavors.

  • 1 tablespoon lemon juice
