Mashed Sweet Potatoes

Creamy, buttery and wonderful combination of sweet and salty is what mashed sweet potatoes recipe is all about. This savory sweet potatoes mash recipe is yummy side dish with almost any meal. Serve it with chicken, pork, beef, fish or even vegetarian meal, it pairs perfect!

Ingredients

Servings
  • 2 lbs sweet potatoes peeled and diced into 1 inch cubes
  • 2 yukon potatoes optional, you can leave out, peeled and diced into 1 inch cubes
  • 2 bay leaves
  • 1 onion cut into half
  • 1 clove garlic minced
  • salt and pepper to taste
  • 3 tablespoon butter unsalted
  • ¼ cup sour cream
  • Fresh parsley for garnish

Instructions

Prep Work:

  1. Using a peeler peel potato skin and dice all potatoes. You can dice them roughly about 1 inch cubes. Peel and dice Yukon potatoes as well if using. You can leave out Yukon potatoes and go ahead with only sweet potatoes. Your choice.
  2. Peel onions and cut into halves.
  3. Mince garlic clove.

Boil:

  1. In a large pot add diced potatoes, onions halves, bay leaves, salt and water. Bring it to boil on medium high heat.
  2. Once water starts boiling reduce flame to medium low and boil potatoes uncovered for about 9 to 11 minutes or until potatoes are tender (fork passes through and comes out of the potatoes easily).
  3. Remove pot from stove. Remove onion and bay leaves from the pot and drain the potatoes.
  4. Let potatoes sit in colander for couple of minutes so all water drains out and potatoes are dry.

Mash:

  1. Using hand masher or potato ricer mash potatoes. When half done add softened butter, salt and pepper to taste, minced garlic. Continue to mash.
  2. Add in sour cream and mash until it reaches it desired consistency.

Serve:

  1. Serve it mash potatoes as side dish with any meal. It’s best served warm. It’s great side dish for family gatherings and on holiday dinner table.

Notes

  • To make peeling easy, alternatively cook sliced potatoes with skin on until tender. Peel comes off easily.
  • Cook potatoes until they turn tender, don’t over cook. If potatoes are over cooked, the mash will not taste great.
  • Using potato ricer will give you creamier and fluffy mash.
  • Mash sweet potatoes while they are still hot.
  • Use hot melted butter or room temperature softened butter. It mashes easily with the potatoes.
  • Mash sweet potatoes are best served warm.
