Ingredients
- 2.5 lbs sweet potatoes
- 6 tablespoons butter plus more for topping if desired
- 1/2 cup sour cream
- 1/4 cup parmesan
- 1 teaspoon salt
- 1 teaspoon pepper

- chopped chives
Instructions
- Peel the sweet potatoes, and chop them into 2 inch cubes. Add the potatoes to a large pot and cover with water. Place on the stove and bring to a boil.
- Boil the potatoes for 12-14 minutes, until they are fork tender. Then drain the potatoes and return to the pot.
- Add butter, sour cream, parmesan, salt and pepper and mash with the potatoes until they reach the desired consistency.OR, for a smooth consistency use an electric mixer on low until everything is just combined and the potatoes are smooth.
- Top your potatoes with extra melted butter and chopped chives.
Notes
- *Tip* If you'd like to turn this into a sweet potato casserole, put your potatoes into a casserole dish, add a cup of mini marshmallows and bake at 350°F for about 20 minutes. Keep an eye on it during the last few minutes to ensure the marshmallows are golden brown and the casserole is heated through.
