Matcha Butter
Description
Matcha Butter combines creamy softened butter with matcha powder for a touch of green tea flavor. The butter is beaten smooth before the matcha, vanilla, sea salt, and sweeteners are added and incorporated. Using a liquid sweetener may cause slight curdling initially, but continued beating will bring it together. Whipped Matcha Butter includes an additional step of whipping in heavy cream to introduce air, lightening the texture without overpowering the matcha essence.
This flavored butter has a balance of subtly sweet and earthy notes, making it suitable for serving on toast, pancakes, or in baking recipes that benefit from a matcha taste. The preparation requires soft butter and a bit of patience to ensure smooth consistency.
Chilling the butter after mixing helps the flavors to meld and the butter to firm up. Whipping the butter with cream requires caution to avoid overwhipping.
Ingredients
Matcha butter:
- 1 tick butter softened at room temperature, unsalted, ½ cup
- 2 teaspoon matcha powder sifted
- 1 teaspoon vanilla extract
- pinch of sea salt
- 1.5 -2 tablespoon maple syrup to your taste, or honey, or powdered sugar
For whipped matcha butter:
- 1-2 tablespoon heavy whipping cream
Instructions
- In a stand mixer bowl fitted with a paddle attachment, (or a hand mixer), beat the softened butter until smooth and creamy.
- Add in sifted matcha and continue to beat until incorporated and smooth.
- Next, add in vanilla extract, pinch of sea salt, sweetener (maple syrup, honey, or powdered sugar) and continue to beat until smooth.
- *Note: if using a liquid sweetener (eg. maple syrup or honey), the butter may curdle a little -- just continue to beat and it will come together. Also, if the temperature of the maple syrup or honey is colder than the butter, it may curdle as well. You can warm the bowl a little to help it emulsify.
- Transfer to a small airtight container and refrigerate for at least 30 minutes before using to let the flavors come together.
For whipped matcha butter:
- Follow the instructions above, but add in heavy whipping cream after adding in the sweetener. Whip until just lightened and fluffy, but be careful not to overwhip.
Notes
- Whip the butter for 5 to 10 minutes until smooth and creamy for best texture.
- If your liquid sweetener is cold or the butter curdles during mixing, gently warming the bowl can help the ingredients emulsify.
- Refrigerate the finished butter for at least 30 minutes to allow flavors to come together before using.
- When making whipped matcha butter, avoid overwhipping the cream to maintain light but stable texture.
