Meatloaf Sandwich

Leftover meatloaf just got a serious upgrade with this easy and delicious Meatloaf Sandwich recipe! Piled high with juicy slices of meatloaf, melty cheese, and bbq sauce, all tucked between buttery toasted bread, this sandwich is the ultimate way to enjoy comfort food in handheld form.

Ingredients

  • 2 tablespoons butter softened
  • 4 lices sourdough bread or Texas toast
  • 2 tablespoons mayonnaise
  • 2 tablespoons BBQ sauce
  • 8 lices sharp cheddar cheese
  • 12 lices dill pickles
  • ½ cup Fried onion strings or use caramelized or raw onions instead
  • 2 lices cooked meatloaf

Instructions

  1. Spread one side of each slice of bread with butter.
  2. Combine the mayo and bbq sauce. Spread the other side of each slice of bread with this mixture.
  3. Place two slices of cheddar cheese overlapping in the middle on top of the bbq mayo on each slice of bread, then add 6 dill pickle slices and fried onions on two of the bread slices.
  4. Heat a large skillet on the stove over medium-high heat.
  5. Add the slices of meatloaf and heat up for 2 minutes per side.
  6. Remove the meatloaf from the skillet, then place a slice on top of the pickles and onions on the two slices of bread, then sandwich with the other 2 slices of bread on top with the butter facing out.
  7. Place the sandwiches in the same skillet that you heated the meatloaf and cook for 3-4 minutes per side, or until the bread is golden brown.

Notes

  • If you’re not a fan of mayo, you can just double up on the bbq sauce.
  • The dill pickles and fried onions are optional toppings that can be left off of the sandwich, or substituted with your favorite sandwich toppings.
