Mediterranean Brown Rice Salad

A simple mediterranean brown rice salad loaded with cherry tomatoes, red onion, fresh parsley and feta cheese all tossed in a homemade red wine vinaigrette.

Ingredients
- 3 cups cooked brown rice
- 1 ½ cups cherry tomatoes chopped
- 1 cup crumbled Feta cheese
- ½ cup red onion diced
- ½ cup parsley chopped
Dressing
- ⅓ cup extra virgin olive oil
- 2 Tablespoons red wine vinegar
- 1 Tablespoon lemon juice
- 1 teaspoon maple syrup
- 1 teaspoon Dijon mustard
- ½ teaspoon sea salt
- ¼ teaspoon pepper
Instructions
- Add all the dressing ingredients into a bowl and whisk until combined.
- In a large bowl, combine all of the salad ingredients, pour dressing over and stir to combine.
- Store in an airtight container for up to a week.
